Apple Bread

Today was snowday #3 this week. The natives are getting restless so I had to bake them some Apple Bread.
Here's the recipe:

Apple Bread
2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon salt
1/2 cup butter, softened (1 stick)
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
2 cups finely shredded apples

Sift first 4 ingredients into medium mixing bowl. Cream butter and sugar in large bowl until light and fluffy. Add eggs, one at a time, mixing well after each addition. Add flour mixture and apples 1/2 at a time, mixing well after each addition. Spoon into well-greased loaf pan. Bake at 350 for 1 hour or until toothpick comes out clean. Cool in pan for 10 minutes, then remove to wire rack to cool completely.
